- Place the cut potatoes in a large bowl and cover them completely with cold water. Soak the potatoes for at least 30 minutes, or up to 2 hours, to remove excess starch.
- Drain the water completely. Rinse the potatoes under cold running water until the water runs clear.
- Dry the potatoes thoroughly. Spread them on a clean kitchen towel or paper towels and pat them completely dry. Moisture prevents crisping.
- In a clean bowl, toss the dry potatoes with the oil, sea salt, garlic powder, and black pepper until lightly coated.
- Preheat your air fryer to 380 degrees Fahrenheit (195 degrees Celsius) for 5 minutes.
- Place the seasoned potatoes in the air fryer basket in a single layer, working in batches if necessary. Do not overcrowd the basket.
- Air fry for 15 to 20 minutes, shaking the basket vigorously every 5 minutes to ensure even cooking and browning.
- Continue cooking until the fries are golden brown and crispy to your liking.

- For extra crispiness, you can briefly blanch the soaked potatoes in boiling water for 3 minutes before drying them completely.
