- 1 tablespoon olive oil
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup mayonnaise
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon lime juice
- 1/4 cup crumbled cotija cheese
- Optional: extra chili powder for dusting
Instructions
- Preheat your air fryer to 375°F (190°C).
- In a small bowl, toss the corn with olive oil, chili powder, cumin, salt, and pepper until evenly coated.
- Place the seasoned corn in the air fryer basket in a single layer.
- Air fry for 10-12 minutes, flipping halfway through, until the corn is tender and lightly charred.
- While the corn is cooking, mix together the mayonnaise, cilantro, and lime juice in a small bowl.
- Once the corn is cooked, brush it generously with the mayonnaise mixture.
- Sprinkle with cotija cheese and an optional dusting of chili powder.
