Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into tender strips
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, lightly beaten
  • Cooking spray or 2 tablespoons olive oil


Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly coat with cooking spray.
  2. In a shallow dish, combine the almond flour, Parmesan cheese, paprika, garlic powder, salt, and pepper. Mix well.
  3. Place the beaten eggs in another shallow dish.
  4. Dip each chicken tender first into the egg mixture, letting the excess drip off.
  5. Next, dredge the tender thoroughly in the almond flour mixture, pressing gently so the coating adheres.
  6. Place the coated tenders on the prepared baking sheet in a single layer.
  7. Lightly spray the tops of the tenders with cooking spray or drizzle with olive oil.
  8. Bake for 18-22 minutes, flipping halfway through, until the chicken is cooked through and the coating is golden brown and crisp.

Notes

  • For extra crispiness, you can bake them on a wire rack placed over the baking sheet.
