- 1.5 lbs boneless, skinless chicken breasts, cut into tender strips
- 1 cup almond flour
- 1/2 cup grated Parmesan cheese
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, lightly beaten
- Cooking spray or 2 tablespoons olive oil
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly coat with cooking spray.
- In a shallow dish, combine the almond flour, Parmesan cheese, paprika, garlic powder, salt, and pepper. Mix well.
- Place the beaten eggs in another shallow dish.
- Dip each chicken tender first into the egg mixture, letting the excess drip off.
- Next, dredge the tender thoroughly in the almond flour mixture, pressing gently so the coating adheres.
- Place the coated tenders on the prepared baking sheet in a single layer.
- Lightly spray the tops of the tenders with cooking spray or drizzle with olive oil.
- Bake for 18-22 minutes, flipping halfway through, until the chicken is cooked through and the coating is golden brown and crisp.
- Serve immediately and enjoy your healthier comfort food!
Notes
- For extra crispiness, you can bake them on a wire rack placed over the baking sheet.
- Feel free to add a pinch of cayenne pepper to the almond mixture for a little heat.
