Ingredients
Scale
- 1 (15-ounce) can chickpeas, rinsed and thoroughly dried
- 1 tablespoon maple syrup
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 teaspoon coconut oil, melted (optional, for extra crispness)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat the rinsed chickpeas very dry using a clean kitchen towel or paper towels. This step is key for crispiness.
- In a medium bowl, toss the dried chickpeas with the melted coconut oil, if using.
- In a separate small bowl, mix together the maple syrup, cinnamon, and salt.
- Pour the maple syrup mixture over the chickpeas and toss gently until they are evenly coated.
- Spread the coated chickpeas in a single layer on the prepared baking sheet. Do not overcrowd the pan.
- Roast for 20 to 30 minutes, stirring halfway through, until they are golden brown and crunchy.
- Let them cool slightly on the pan; they will crisp up more as they cool. Store leftovers in an airtight container.
Notes
- Make sure your chickpeas are completely dry before tossing with the syrup mixture. Excess moisture prevents a good roast.
- For the crunchiest results, make sure to spread them in a single layer and avoid stirring too much during the first half of baking.
- You can adjust the cinnamon to your preference. A little extra is always welcome!
