Ingredients

  • 4 Bone-in, skin-on chicken thighs
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 cup Apple cider
  • 1/4 cup Apple cider vinegar
  • 2 tablespoons Brown sugar
  • 1 teaspoon Dried thyme
  • 2 cloves Garlic, minced


Instructions

  1. Pat the chicken thighs dry with paper towels. Season all sides with salt and pepper.
  2. Heat the olive oil in a large, oven-safe skillet over medium-high heat.
  3. Sear the chicken thighs, skin-side down, until the skin is deeply golden brown and crisp, about 6-8 minutes.
  4. Flip the chicken thighs and cook for 2 minutes on the other side. Remove the skillet from the heat.
  5. In a small bowl, whisk together the apple cider, apple cider vinegar, brown sugar, thyme, and minced garlic.
  6. Pour the apple cider mixture over the chicken in the skillet.
  7. Transfer the skillet to a preheated oven at 375°F (190°C).
  8. Roast for 25-30 minutes, or until the chicken is cooked through and the sauce has reduced slightly.
  9. Remove from the oven. Let the chicken rest in the skillet for 5 minutes before serving. Spoon the pan sauce over the top.

Notes

  • Feel free to add a few small wedges of apple to the pan while roasting for extra flavor.
