- 1/4 cup packed brown sugar
- 1 large apple, peeled and diced
- 1 1/2 cups milk (dairy or non-dairy)
- 1 large egg, lightly beaten
- 1/4 cup melted butter or coconut oil
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
- In a large bowl, combine the rolled oats, baking powder, cinnamon, salt, and brown sugar. Mix well.
- Stir in the diced apple.
- In a separate bowl, whisk together the milk, beaten egg, melted butter, and vanilla extract.
- Pour the wet ingredients over the dry ingredients and mix until just combined. Do not overmix.
- Transfer the mixture to the prepared baking dish.
- Bake for 30 to 35 minutes, or until the top is golden brown and the center is set.
- Let it cool for 5 minutes before serving.
Notes
- Serve warm with a drizzle of maple syrup or a sprinkle of extra cinnamon.
- For a richer flavor, use half milk and half heavy cream.
