  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1/2 cup whole milk
  • 1 large egg, beaten (for brushing)


Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. In a large bowl, combine the sliced apples, 1/2 cup granulated sugar, brown sugar, 1 tablespoon flour, cinnamon, nutmeg, and lemon juice. Toss gently until the apples are evenly coated.
  3. Pour the apple mixture into the prepared baking dish. Dot the top of the apples evenly with the 1/4 cup of cold butter pieces.
  4. Prepare the topping: In a separate medium bowl, whisk together 1 1/2 cups flour, baking powder, salt, and 1/4 cup sugar.
  5. Cut in the 1/2 cup cold butter pieces using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  6. Pour in the milk and stir just until a soft dough forms. Do not overmix.
  7. Drop spoonfuls of the dough over the apple filling, leaving small gaps between the mounds for expansion.
  8. Brush the tops of the dough mounds lightly with the beaten egg.
  9. Bake for 40 to 45 minutes, or until the topping is golden brown and the apple filling is bubbly.
  10. Let the cobbler cool for at least 15 minutes before serving warm, preferably with vanilla ice cream.

Notes
