Description

Prepare a crunchy, refreshing Asian-style coleslaw using a homemade sesame ginger dressing. This salad is simple to make and works well as a side dish.


Ingredients

  • 4 cups shredded cabbage (Napa or green mix)
  • 1 cup shredded carrots
  • 1/2 cup sliced green onions
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons toasted sesame seeds
  • 1/4 cup rice vinegar
  • 3 tablespoons soy sauce or tamari
  • 2 tablespoons sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper


Instructions

  1. In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey or maple syrup, grated ginger, minced garlic, and black pepper to make the dressing. Set aside.
  2. In a large bowl, combine the shredded cabbage, shredded carrots, sliced green onions, and cilantro.
  3. Pour the prepared sesame dressing over the cabbage mixture.
  4. Toss all ingredients together until the vegetables are evenly coated with the dressing.
  5. Stir in the toasted sesame seeds.
  6. Cover the bowl and chill the coleslaw in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Notes

  • For a gluten-free version, use tamari instead of soy sauce.
  • You can add 1/4 cup of chopped peanuts for extra crunch.
