Description

Make this simple Asian Mango Glazed Chicken for a quick, flavorful weeknight dinner. The glaze combines sweet mango with savory soy and fresh ginger.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 cup fresh or frozen mango chunks
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (for slurry)
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. In a blender or food processor, combine the mango chunks, soy sauce, rice vinegar, honey, grated ginger, minced garlic, sesame oil, and red pepper flakes. Blend until smooth.
  3. Pour half of the mango sauce mixture into a small saucepan. Bring to a simmer over medium heat.
  4. Whisk the cornstarch slurry into the simmering sauce. Cook, stirring constantly, until the sauce thickens into a glaze, about 1-2 minutes. Remove from heat and set aside. This is your finishing glaze.
  5. Use the remaining half of the raw mango sauce as a marinade for the chicken for at least 15 minutes, or up to 4 hours in the refrigerator.
  6. Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade (discard the used marinade).
  7. Sear the chicken for 5-7 minutes per side, until cooked through and golden brown.
  8. Reduce the heat to low. Pour the reserved, thickened mango glaze over the chicken in the skillet. Toss gently to coat the chicken completely.
  9. Cook for 1 minute more until the glaze is hot and sticky. Serve immediately.

Notes

  • For thicker cuts of chicken, pound them to an even thickness before cooking to ensure even cooking time.
  • Serve this chicken over steamed white rice or with roasted broccoli for a complete meal.
  • If you prefer baking, bake the chicken at 400°F (200°C) for 20 minutes, then brush with the glaze and bake for 5 more minutes until the glaze sets.
