- 1.5 lbs boneless, skinless chicken breasts or thighs
- 1 cup fresh or frozen mango chunks
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons honey or brown sugar
- 1 tablespoon fresh ginger, grated
- 2 cloves garlic, minced
- 1 teaspoon sesame oil
- 1/2 teaspoon red pepper flakes (optional)
- 1 tablespoon cornstarch mixed with 2 tablespoons cold water (for slurry)
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- Season the chicken pieces lightly with salt and pepper.
- In a blender or food processor, combine the mango chunks, soy sauce, rice vinegar, honey, grated ginger, minced garlic, sesame oil, and red pepper flakes. Blend until smooth.
- Pour half of the mango sauce mixture into a small saucepan. Bring to a simmer over medium heat.
- Whisk the cornstarch slurry into the simmering sauce. Cook, stirring constantly, until the sauce thickens into a glaze, about 1-2 minutes. Remove from heat and set aside. This is your finishing glaze.
- Use the remaining half of the raw mango sauce as a marinade for the chicken for at least 15 minutes, or up to 4 hours in the refrigerator.
- Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade (discard the used marinade).
- Sear the chicken for 5-7 minutes per side, until cooked through and golden brown.
- Reduce the heat to low. Pour the reserved, thickened mango glaze over the chicken in the skillet. Toss gently to coat the chicken completely.
- Cook for 1 minute more until the glaze is hot and sticky. Serve immediately.
Notes
- For thicker cuts of chicken, pound them to an even thickness before cooking to ensure even cooking time.
- Serve this chicken over steamed white rice or with roasted broccoli for a complete meal.
- If you prefer baking, bake the chicken at 400°F (200°C) for 20 minutes, then brush with the glaze and bake for 5 more minutes until the glaze sets.
