- 6 large eggs
- 1 ripe avocado, mashed
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Paprika, for garnish
Instructions
- Hard-boil the eggs. Place eggs in a saucepan and cover with cold water. Bring to a boil, then remove from heat, cover, and let stand for 10-12 minutes. Drain and rinse with cold water.
- Peel the eggs and slice them in half lengthwise. Scoop out the yolks and place them in a medium bowl.
- Mash the avocado in a separate bowl until smooth.
- Add the mashed avocado, mayonnaise, Dijon mustard, salt, and pepper to the egg yolks. Mix well until combined and creamy.
- Spoon the avocado yolk mixture back into the egg white halves.
- Garnish with paprika before serving.
Notes
- For a creamier filling, use a very ripe avocado.
- You can add a pinch of cayenne pepper for a little heat.
- These can be made a day in advance and stored in the refrigerator.
