- 1 pound ground beef
- 1 pound bacon, chopped
- 1 large onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups diced potatoes
- 1 cup diced carrots
- 1 cup diced celery
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- Optional toppings: extra bacon, shredded cheese, chopped green onions, sour cream
Instructions
- In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned. Drain off excess grease.
- Add the chopped bacon to the pot and cook until crispy. Remove bacon with a slotted spoon and set aside, leaving about 2 tablespoons of bacon grease in the pot.
- Add the chopped onion to the bacon grease and cook until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Pour in the beef broth, scraping up any browned bits from the bottom of the pot.
- Add the diced potatoes, carrots, and celery to the pot.
- Stir in the salt, pepper, thyme, and oregano.
- Bring the soup to a boil, then reduce heat, cover, and simmer for 20-25 minutes, or until the vegetables are tender.
- Stir in the heavy cream and shredded cheddar cheese until the cheese is melted and the soup is creamy.
- Add most of the cooked bacon back into the soup; reserve some for garnish.
- Serve hot, garnished with reserved bacon and your favorite toppings.
Notes
- For a thicker soup, you can mash some of the potatoes against the side of the pot before adding the cream and cheese.
- Feel free to add other favorite burger toppings like pickles or a dash of Worcestershire sauce.
- This soup freezes well; let it cool completely before freezing in an airtight container.
