Description

Ingredients

  • 1 pound ground beef
  • 1 pound bacon, chopped
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups diced potatoes
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • Optional toppings: extra bacon, shredded cheese, chopped green onions, sour cream


Instructions

  1. In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned. Drain off excess grease.
  2. Add the chopped bacon to the pot and cook until crispy. Remove bacon with a slotted spoon and set aside, leaving about 2 tablespoons of bacon grease in the pot.
  3. Add the chopped onion to the bacon grease and cook until softened, about 5-7 minutes.
  4. Stir in the minced garlic and cook for 1 minute more until fragrant.
  5. Pour in the beef broth, scraping up any browned bits from the bottom of the pot.
  6. Add the diced potatoes, carrots, and celery to the pot.
  7. Stir in the salt, pepper, thyme, and oregano.
  8. Bring the soup to a boil, then reduce heat, cover, and simmer for 20-25 minutes, or until the vegetables are tender.
  9. Stir in the heavy cream and shredded cheddar cheese until the cheese is melted and the soup is creamy.
  10. Add most of the cooked bacon back into the soup; reserve some for garnish.
  11. Serve hot, garnished with reserved bacon and your favorite toppings.

Notes

  • For a thicker soup, you can mash some of the potatoes against the side of the pot before adding the cream and cheese.
  • Feel free to add other favorite burger toppings like pickles or a dash of Worcestershire sauce.
  • This soup freezes well; let it cool completely before freezing in an airtight container.
