Instructions
- Preheat your oven to 375°F (190°C).
- Cook the diced bacon in a skillet until crispy. Remove bacon and set aside, leaving the bacon drippings in the skillet.
- Add the chopped onion to the skillet with bacon drippings and sauté until softened.
- Stir in the flour and cook for 1 minute.
- Gradually whisk in the milk until smooth.
- Bring the mixture to a simmer, stirring constantly, until thickened.
- Remove from heat and stir in the shredded cheddar cheese until melted.
- Season with salt and pepper to taste.
- In a baking dish, layer the sliced squash.
- Pour the cheese sauce over the squash.

- Bake for 25-30 minutes, or until the squash is tender and the top is golden brown.
