These Bacon Wrapped Dates with Goat Cheese are the perfect appetizer. You get a wonderful combination of sweet dates, salty bacon, and creamy goat cheese. They are easy to make and always a hit at any gathering.

- 12 Medjool dates
- 4 ounces soft goat cheese
- 6 slices bacon, halved lengthwise
- 1 tablespoon maple syrup (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Carefully slice each date lengthwise and remove the pit.
- Stuff each date cavity with a small amount of goat cheese.
- Wrap one half-slice of bacon around the center of each stuffed date, securing it with a toothpick if needed.
- Place the wrapped dates seam-side down on the prepared baking sheet.
- If using, brush the tops lightly with maple syrup for extra glaze.
- Bake for 15 to 20 minutes, or until the bacon is crisp.
- Remove from the oven and let them cool slightly before serving.
Notes
- If your bacon is very thick, you may need to bake them slightly longer to get it fully crisp.
- For an extra flavor pop, sprinkle the finished dates with a tiny pinch of sea salt or finely chopped chives.
- Use toothpicks to secure the bacon if you find the wrapping keeps coming undone.
