  • 1/2 cup Baileys Irish Cream liqueur

  • 1 (3.9 ounce) package instant chocolate pudding mix
  • 1 1/2 cups cold milk
  • 1 package (about 14 ounces) chocolate sandwich cookies (like Oreos), crushed
  • 2 cups cubed chocolate cake or brownies (store-bought is fine)
  • Extra Baileys for drizzling (optional)


Instructions

  1. Prepare the cookie crumble: Place the chocolate sandwich cookies in a food processor or large plastic bag and crush them until they form coarse crumbs. Set aside about 1 cup for topping and use the rest for layering.
  2. Make the cheesecake layer: In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. Gradually beat in the 1/2 cup of Baileys Irish Cream until fully combined.
  3. Prepare the whipped cream: In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined.
  4. Make the pudding layer: In another bowl, whisk the instant chocolate pudding mix with the cold milk for about 2 minutes until it thickens.
  5. Assemble the trifle: Select a large glass trifle bowl or individual serving glasses. Start with a layer of chocolate cookie crumbs on the bottom.
  6. Add a layer of cubed chocolate cake or brownies over the crumbs.
  7. Spread half of the Baileys cheesecake mixture evenly over the cake layer.
  8. Spoon half of the chocolate pudding mixture over the cheesecake layer.
  9. Repeat the layers: Add another layer of cookie crumbs, followed by the remaining cake/brownies, the rest of the cheesecake mixture, and finally the rest of the chocolate pudding.
  10. Chill: Cover the trifle and refrigerate for at least 4 hours, or preferably overnight, to allow the layers to set.
  11. Garnish before serving: Top the trifle with the reserved cookie crumbs. If desired, drizzle a small amount of extra Baileys over the top layer just before serving.
