- 1/4 teaspoon ground cinnamon

- Preheat your oven to 375°F (190°C). Lightly grease a standard 12-cup muffin tin or line it with paper liners.
- In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, salt, and granulated sugar.
- In a separate medium bowl, whisk the egg, milk, melted butter, and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix. A few lumps are fine.
- Fold in the diced apples until they are evenly distributed throughout the batter.
- Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
- Bake for 16 to 19 minutes, or until a toothpick inserted into the center comes out clean and the tops are lightly golden brown.
- While the fritters bake, prepare the glaze: Whisk together the powdered sugar, milk, vanilla extract, and cinnamon in a small bowl until smooth. Add more milk, one teaspoon at a time, if the glaze is too thick.
- Remove the fritters from the oven and let them cool in the pan for 5 minutes.
- Transfer the warm fritters to a wire rack. Drizzle the cinnamon glaze generously over the tops of the warm fritters. Serve warm for the best texture.
