- 1 pound ground chicken
- 1/4 cup Italian seasoned breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup marinara sauce
- 1/4 cup shredded mozzarella cheese
- 2 tablespoons chopped fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a medium bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, parsley, salt, and pepper. Mix gently until just combined.
- Roll the mixture into small meatballs, about 1 inch in diameter. You should get about 20-24 meatballs.
- Place the meatballs on the prepared baking sheet.
- Bake for 15-18 minutes, or until the meatballs are cooked through and no longer pink inside.
- Remove the meatballs from the oven. Spoon a little marinara sauce over each meatball and top with a pinch of shredded mozzarella cheese.
- Return the meatballs to the oven for another 2-3 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh basil before serving.
Notes
- For an extra cheesy center, you can press a small cube of mozzarella into the middle of each meatball before baking.
- Feel free to add a pinch of red pepper flakes to the meatball mixture for a little heat.
- Serve these meatballs as an appetizer, with pasta, or on small slider buns.
