- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 8 (6-inch) corn tortillas
- 1 cup shredded Monterey Jack cheese
- Optional toppings: salsa, sour cream, guacamole, chopped cilantro
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a baking sheet.
- In a medium saucepan, combine chicken breasts, olive oil, chili powder, cumin, garlic powder, salt, and pepper. Add just enough water to cover the chicken.
- Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until chicken is cooked through.
- Remove chicken from the saucepan and shred it using two forks.
- Warm the corn tortillas slightly to make them pliable. You can do this by wrapping them in a damp paper towel and microwaving for 30 seconds, or by warming them briefly in a dry skillet.

- Serve immediately with your favorite toppings.
Notes
- For extra crispy taquitos, you can lightly brush them with oil before baking.
- If you prefer a spicier taquito, add a pinch of cayenne pepper to the chicken mixture.
