Ingredients

  • 1 pint cherry or grape tomatoes
  • 1/2 cup olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 cloves garlic, minced
  • 5 ounces fresh spinach
  • 1 pound pasta (such as penne or rigatoni)
  • 1/4 cup reserved pasta water


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the block of feta cheese in a small, oven-safe baking dish.
  3. Scatter the cherry tomatoes around the feta.
  4. Drizzle everything with half of the olive oil. Sprinkle with oregano, pepper, and red pepper flakes, if using.
  5. Bake for 25 to 30 minutes, until the tomatoes have burst and the feta is soft and slightly browned.
  6. While the feta bakes, cook your pasta according to package directions. Reserve about 1/2 cup of the starchy pasta water before draining.
  7. Remove the baking dish from the oven. Add the minced garlic and the fresh spinach around the feta and tomatoes.
  8. Use a fork to mash the baked feta and tomatoes together, mixing them with the spinach until the spinach wilts down. Add the remaining olive oil.
  9. Toss the cooked pasta into the baking dish. Add a little reserved pasta water as needed to create a creamy sauce.
