  • 1 tablespoon olive oil

  • 1 teaspoon Dijon mustard


Instructions

  1. Season the chicken breasts generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Sear the chicken breasts for 5-7 minutes per side, until golden brown and cooked through (internal temperature of 165°F or 74°C). Remove chicken from the skillet and set aside.
  4. Reduce the heat to medium. Add the balsamic vinegar, sliced strawberries, honey (or maple syrup), and Dijon mustard to the same skillet.
  5. Bring the mixture to a simmer, stirring occasionally. Let it cook for 3-5 minutes until the sauce thickens slightly into a glaze. The strawberries will soften.
  6. Return the chicken to the skillet. Spoon the strawberry balsamic glaze over the chicken breasts until coated.
  7. Serve immediately.
