Instructions
- Season the chicken breasts generously with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Sear the chicken breasts for 5-7 minutes per side, until golden brown and cooked through (internal temperature of 165°F or 74°C). Remove chicken from the skillet and set aside.
- Reduce the heat to medium. Add the balsamic vinegar, sliced strawberries, honey (or maple syrup), and Dijon mustard to the same skillet.
- Bring the mixture to a simmer, stirring occasionally. Let it cook for 3-5 minutes until the sauce thickens slightly into a glaze. The strawberries will soften.
- Return the chicken to the skillet. Spoon the strawberry balsamic glaze over the chicken breasts until coated.
- Serve immediately.
