- 1 ripe banana, frozen
- 1/4 cup chia seeds

Instructions
- Combine the almond milk, frozen banana, chia seeds, maple syrup, vanilla extract, cinnamon, and salt in a high-speed blender.
- Blend on high until the mixture is completely smooth and creamy, scraping down the sides as needed. This may take 1 to 2 minutes depending on your blender.
- Pour the blended mixture into two small bowls or jars.
- Refrigerate for at least 4 hours, or preferably overnight, to allow the chia seeds to fully absorb the liquid and thicken the mixture to a pudding consistency.
- Before serving, top with crushed graham crackers or toasted pecans if desired.
Notes
- Using a frozen banana makes the final texture thicker and colder, mimicking a chilled pie filling.
- For a richer flavor, substitute half of the almond milk with full-fat coconut milk from a can.
