- 1 egg
- 1/2 cup rolled oats

Instructions
- Mash the ripe banana in a bowl.
- Add the egg to the mashed banana and whisk until well combined.
- Stir in the rolled oats and baking powder. Add cinnamon if desired. Mix until just combined. The batter will be thick.
- Heat a lightly greased skillet or griddle over medium heat.
- Pour about 1/4 cup of batter onto the hot skillet for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through.
