Ingredients
Scale
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup mashed ripe bananas (about 2-3 medium bananas)
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts, plus more for topping
Instructions
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, combine the mashed bananas, melted butter, granulated sugar, eggs, and vanilla extract. Mix until well combined.
- Add the dry ingredients to the wet ingredients and stir until just combined. Be careful not to overmix.
- Gently fold in the chopped walnuts.
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full. Sprinkle a few extra chopped walnuts on top of each muffin.
- Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- Ensure your bananas are very ripe for the best flavor and sweetness.
- For an extra moist muffin, you can add 1/4 cup of sour cream or Greek yogurt to the wet ingredients.
- If you prefer a sweeter muffin, you can increase the sugar to 1 cup.
- Experiment with different nuts like pecans or add chocolate chips for variations.
