- 1 cup shredded cabbage mix (slaw mix)
- 1/4 cup thinly sliced carrots
- 2 tablespoons chopped green onion, for garnish
- 1 teaspoon sesame seeds, for garnish
- For the Bang Bang Sauce:
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (adjust to your spice preference)
- 1 teaspoon honey or maple syrup
- 1 teaspoon rice vinegar
Instructions
- Preheat your air fryer to 400°F (200°C). If baking, preheat oven to 425°F (220°C).
- In a medium bowl, toss the salmon cubes with olive oil.
- In a separate shallow dish, mix the cornstarch, salt, and pepper. Dredge the salmon cubes in the cornstarch mixture until lightly coated.
- For Air Frying: Place the coated salmon in a single layer in the air fryer basket. Cook for 8 to 10 minutes, shaking the basket halfway through, until crispy and cooked through.
- For Baking: Arrange the salmon on a baking sheet lined with parchment paper. Bake for 12 to 15 minutes until crispy.
- While the salmon cooks, prepare the sauce. Whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar in a small bowl until smooth.
- In a large bowl, combine the cooked rice, shredded cabbage, and carrots.
- Once the salmon is cooked, place the hot bites into the bowl with the sauce. Gently toss until all pieces are evenly coated.
- Assemble the bowls: Divide the rice and vegetable mixture among serving bowls. Top each bowl with the sauced Bang Bang salmon bites.
- Garnish with chopped green onion and sesame seeds before serving.
Notes
- For extra crispy salmon without an air fryer, you can pan-fry the bites in 2 tablespoons of neutral oil over medium-high heat for 5-7 minutes, turning until golden brown on all sides.
- You can substitute the rice with quinoa or cauliflower rice for a different base.
- Make the Bang Bang sauce ahead of time and store it covered in the refrigerator for up to 3 days.
