- 1 pound boneless, skinless chicken breasts
- 1/2 cup BBQ sauce, divided
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 4 cups chopped romaine lettuce
- 2 cups chopped cooked chicken
- 4 slices bacon, cooked and crumbled
- 2 hard-boiled eggs, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/2 avocado, diced
- 1/4 cup crumbled blue cheese (optional)
- 1/4 cup ranch dressing or BBQ dressing
Instructions
- Preheat your grill to medium-high heat.
- In a bowl, toss the chicken breasts with 1/4 cup of BBQ sauce, smoked paprika, garlic powder, salt, and pepper.
- Grill the chicken for 6-8 minutes per side, or until cooked through and reaches an internal temperature of 165°F (74°C). Let it rest for a few minutes, then dice or shred.
- While the chicken is grilling, prepare your salad components. Chop the romaine lettuce and place it in a large salad bowl.
- Add the cooked chicken, crumbled bacon, chopped hard-boiled eggs, cherry tomatoes, and sliced red onion to the bowl.
- Top with diced avocado and crumbled blue cheese, if using.
- Drizzle with your favorite ranch or BBQ dressing just before serving.
Notes
- You can substitute grilled chicken thighs for chicken breasts if preferred.
- For a smoky flavor, use a mesquite or hickory flavored BBQ sauce.
- If you don’t have a grill, you can pan-sear or bake the chicken.
