Description
Delicious BBQ Jackfruit Sliders, a fantastic plant-based alternative to traditional pulled pork. Tender jackfruit simmered in smoky BBQ sauce, piled high on soft slider buns.
Ingredients
Scale
- 1 (20 ounce) can young green jackfruit in brine, drained and rinsed
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 cup your favorite BBQ sauce
- 1/4 cup vegetable broth
- 1 tablespoon apple cider vinegar
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- Salt and black pepper to taste
- Slider buns
- Optional toppings: coleslaw, pickles, red onion slices
Instructions
- Drain and rinse the jackfruit. Use your hands to shred the jackfruit, discarding the core and any seeds.
- Heat the olive oil in a large skillet or pot over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Stir in the shredded jackfruit, BBQ sauce, vegetable broth, apple cider vinegar, smoked paprika, chili powder, salt, and pepper.
- Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, stirring occasionally, until the jackfruit is tender and has absorbed the flavors.
- If the sauce is too thick, add a little more vegetable broth. If it’s too thin, cook uncovered for a few minutes to reduce.
- Taste and adjust seasoning if needed.
- Serve the BBQ jackfruit on slider buns with your favorite toppings.
Notes
- Make sure to use young green jackfruit in brine or water, not ripe jackfruit in syrup.
- You can prepare the BBQ jackfruit ahead of time and reheat it gently before serving.
- This recipe is easily scalable for larger gatherings.
