Prepare flavorful steak skewers finished with a rich, garlicky, and herby compound butter for grilling.

- 1.5 lbs sirloin steak, cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow onion, cut into 1-inch pieces
- 1/2 cup unsalted butter, softened
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh chives, chopped
- 1 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 12 wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for 30 minutes.
- Prepare the Cowboy Butter: In a small bowl, combine the softened butter, minced garlic, parsley, chives, smoked paprika, red pepper flakes, salt, and pepper. Mix until fully combined. Set aside.
- Assemble the skewers: Thread the steak cubes, bell pepper pieces, and onion pieces onto the skewers, alternating ingredients. Brush the assembled skewers lightly with olive oil.
- Preheat your grill to medium-high heat (about 400 degrees F). Lightly oil the grates.
- Grill the skewers for 3 to 4 minutes per side for medium-rare, turning them until the steak reaches your desired doneness.
- During the last minute of cooking, brush the skewers generously with the Cowboy Butter mixture. The butter will melt and baste the meat and vegetables.
- Remove the skewers from the grill and let them rest for 5 minutes before serving. You can serve extra Cowboy Butter on the side for dipping.
Notes
- For extra smoky flavor, add a pinch of liquid smoke to the butter mixture.
- If you prefer, substitute the steak with large shrimp or halloumi cheese cubes. Adjust cooking time as needed.
- You can make the Cowboy Butter up to three days ahead and store it covered in the refrigerator. Allow it to soften slightly before using as a baste.
