  • 1 large onion, chopped

  • 2 (15 ounce) cans kidney beans, rinsed and drained

  • 1 (28 ounce) can crushed tomatoes
  • 2 cups beef broth
  • 2 large sweet potatoes, peeled and diced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional toppings: shredded cheese, sour cream, cilantro


Instructions

  1. Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off excess fat.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, chili powder, cumin, and oregano. Cook for 1 minute until fragrant.
  4. Pour in the crushed tomatoes and beef broth. Stir well.
  5. Add the diced sweet potatoes, kidney beans, and black beans.
  6. Bring the mixture to a simmer. Reduce heat to low, cover, and cook for 30 to 40 minutes, or until the sweet potatoes are tender. Stir occasionally.
