Description

Make superior teriyaki sauce in five minutes using basic pantry ingredients. This recipe works perfectly as a thick glaze or a versatile marinade for chicken, meat, or vegetables.


Ingredients

  • 1/2 cup soy sauce
  • 1/2 cup mirin (sweet rice wine)
  • 1/4 cup packed brown sugar
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)


Instructions

  1. Combine the soy sauce, mirin, brown sugar, and grated ginger in a small saucepan.
  2. Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring until the sugar dissolves completely.
  3. Once simmering, slowly whisk in the cornstarch slurry.
  4. Continue to cook and stir for about 1 to 2 minutes until the sauce thickens enough to coat the back of a spoon.
  5. Remove from heat immediately. The sauce will thicken slightly more as it cools.

Notes

  • For a thicker glaze, use 1.5 teaspoons of cornstarch instead of 1 teaspoon.
  • If you do not have mirin, substitute with dry sherry or sake mixed with 1 teaspoon of sugar.
  • This sauce is excellent for glazing grilled salmon or tossing with stir-fried vegetables.
