Description
This creamy Mexican Street Corn Salad brings the vibrant flavors of elote to your table in a convenient bowl. It is a perfect side dish for any meal.

- 4 cups corn kernels (fresh, frozen, or canned)
- 1/2 cup mayonnaise
- 1/4 cup sour cream or Mexican crema
- 1/4 cup crumbled cotija cheese, plus more for garnish
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder, plus more for garnish
- 1/4 teaspoon smoked paprika
- Pinch of cayenne pepper (optional)
- Salt and black pepper to taste
Instructions
- If using fresh corn, grill or char the kernels until slightly browned. If using frozen, thaw and then pan-fry or grill. If using canned, drain well.
- In a large bowl, combine the mayonnaise, sour cream or Mexican crema, cotija cheese, chopped cilantro, lime juice, chili powder, smoked paprika, and cayenne pepper (if using).
- Add the prepared corn kernels to the bowl with the dressing.
- Stir gently to coat all the corn evenly.
- Season with salt and black pepper to taste.
- Transfer the salad to a serving dish. Garnish with additional crumbled cotija cheese and a sprinkle of chili powder or smoked paprika.
- Serve immediately or chill for at least 30 minutes for flavors to meld.
Notes
- For extra flavor, roast or grill your corn until slightly charred.
- Adjust the amount of chili powder and cayenne pepper to your spice preference.
- Cotija cheese can be substituted with feta cheese if unavailable.
