- 1 tablespoon turbinado sugar (for sprinkling)
Instructions
- In a large bowl, whisk together flour, 1 tablespoon sugar, and salt.
- Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces of butter.
- Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Do not overmix.
- Gather the dough into a ball, flatten it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- In a medium bowl, gently toss blackberries with 1/4 cup sugar, cornstarch, and lemon juice.
- On a lightly floured surface, roll out the chilled dough into a 12-inch circle.
- Transfer the dough to a baking sheet lined with parchment paper.
- Spoon the blackberry mixture onto the center of the dough, leaving a 2-inch border. Dot the berries with the small butter pieces.
- Fold the dough border up and over the edges of the filling, pleating as needed.
- Brush the folded dough with the beaten egg and sprinkle with turbinado sugar.
- Bake in a preheated oven at 375°F (190°C) for 35-45 minutes, or until the crust is golden brown and the filling is bubbly.
- Let the galette cool on the baking sheet for at least 15 minutes before slicing and serving.
Notes
- For an extra flaky crust, ensure your butter and water are very cold.
- You can add a pinch of cinnamon or nutmeg to the blackberry filling for added warmth.
