Description

Ingredients

  • 1 1/2 cups all-purpose flour, plus more for dusting
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into 1/2-inch pieces
  • 4 to 6 tablespoons ice water
  • 4 cups fresh blackberries
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 tablespoon unsalted butter, cut into small pieces
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon turbinado sugar (for sprinkling)


Instructions

  1. In a large bowl, whisk together flour, 1 tablespoon sugar, and salt.
  2. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces of butter.
  3. Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Do not overmix.
  4. Gather the dough into a ball, flatten it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  5. In a medium bowl, gently toss blackberries with 1/4 cup sugar, cornstarch, and lemon juice.
  6. On a lightly floured surface, roll out the chilled dough into a 12-inch circle.
  7. Transfer the dough to a baking sheet lined with parchment paper.
  8. Spoon the blackberry mixture onto the center of the dough, leaving a 2-inch border. Dot the berries with the small butter pieces.
  9. Fold the dough border up and over the edges of the filling, pleating as needed.
  10. Brush the folded dough with the beaten egg and sprinkle with turbinado sugar.
  11. Bake in a preheated oven at 375°F (190°C) for 35-45 minutes, or until the crust is golden brown and the filling is bubbly.
  12. Let the galette cool on the baking sheet for at least 15 minutes before slicing and serving.

Notes

  • For an extra flaky crust, ensure your butter and water are very cold.
  • You can add a pinch of cinnamon or nutmeg to the blackberry filling for added warmth.
