Make a sweet and savory grilled cheese featuring creamy brie, fresh blueberries, thyme, and a light honey drizzle on sourdough bread.

- 2 slices sourdough bread
- 2 tablespoons unsalted butter, softened
- 3 ounces brie cheese, sliced
- 1/4 cup fresh blueberries
- 1/2 teaspoon fresh thyme leaves
- 1 teaspoon honey
- 1 teaspoon balsamic glaze (optional)
Instructions
- Lightly spread butter on one side of each slice of sourdough bread.
- Place one slice of bread, butter-side down, in a non-stick skillet over medium heat.
- Layer half of the brie slices on the bread in the skillet.
- Scatter the fresh blueberries and thyme leaves over the brie.
- Top with the remaining brie slices.
- Place the second slice of bread on top, butter-side up.
- Grill for 3 to 4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
- Remove the sandwich from the skillet and slice in half.
- Drizzle the top with honey and balsamic glaze, if using, before serving.
Notes
- Use a soft, ripe brie for the best melt.
- If you prefer a thicker blueberry layer, gently mash half the blueberries before adding them to the sandwich.
- For extra flavor, lightly toast the inside of the bread before assembling the sandwich.
