- 1 cup fresh blueberries
- 1/2 cup fresh lemon juice
- 1/4 cup granulated sugar
- 1 cup cold water
- 2 cups sparkling water or club soda, chilled
- Fresh mint sprigs, for garnish (optional)
- Lemon slices, for garnish (optional)
Instructions
- In a small saucepan, combine the blueberries, sugar, and 1/2 cup of water.
- Cook over medium heat, stirring occasionally, until the blueberries burst and the mixture thickens slightly, about 5-7 minutes.
- Remove from heat and let it cool for 5 minutes.
- Strain the blueberry mixture through a fine-mesh sieve into a bowl, pressing gently on the solids to extract as much liquid as possible. Discard the solids.
- Stir the fresh lemon juice into the blueberry syrup.
- Fill glasses with ice.
- Pour about 1/4 cup of the blueberry-lemon mixture into each glass.
- Top with sparkling water or club soda.
- Stir gently to combine.
- Garnish with fresh mint sprigs and lemon slices, if desired.
Notes
- For a less sweet spritzer, reduce the sugar.
- You can make the blueberry-lemon syrup ahead of time and store it in the refrigerator for up to 3 days.
