These Brie and Cranberry Puff Pastry Bites are wonderfully simple and make an elegant addition to any holiday gathering. You will love how these appetizers come together quickly, offering a perfect blend of creamy brie and sweet-tart cranberry filling wrapped in flaky pastry.

- 1 package (14.1 ounces) all-butter puff pastry, thawed
- 8 ounces brie cheese, rind removed and cut into small cubes
- 1/2 cup whole cranberry sauce
- 1 egg, beaten (for egg wash)
- 1 tablespoon water (for egg wash)
- Optional: Flaky sea salt for topping
Instructions
- Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
- Gently unfold the thawed puff pastry sheets onto a lightly floured surface. Cut each sheet into 9 equal squares. You will have 18 squares total.
- In a small bowl, whisk together the beaten egg and water to create the egg wash. Lightly brush the edges of each pastry square with the egg wash.
- Place one cube of brie cheese in the center of half of the pastry squares. Place a small spoonful (about 1 teaspoon) of cranberry sauce on top of the brie on each square.
- Place a second pastry square directly on top of the filled square, aligning the edges. Gently press the edges together with your fingers to seal. For a more decorative seal, use the tines of a fork to crimp the edges.
- Brush the tops of the assembled bites lightly with the remaining egg wash. If you like, sprinkle a tiny pinch of flaky sea salt over the top of each bite.
- Transfer the bites to the prepared baking sheets. Bake for 12 to 15 minutes, or until the pastry is puffed and golden brown.
- Remove from the oven and let cool slightly on the baking sheet before serving warm.
Notes
- If you prefer a less messy bite, you can layer the brie and cranberry sauce on one square and fold it into a triangle instead of stacking two squares.
- Use high-quality brie for the best flavor. The rind can be left on if you prefer, though removing it helps the cheese melt more evenly.
- For a different flavor, try using fig jam instead of cranberry sauce.
