- 1 pound broccoli florets
- 1 medium butternut squash, peeled, seeded, and cubed
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/4 cup heavy cream
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup breadcrumbs (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
- Add broccoli florets and cubed butternut squash to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are slightly tender.
- In a small bowl, whisk together shredded cheddar cheese, milk, heavy cream, salt, and pepper until smooth.
- Pour the cheese sauce over the vegetables in the skillet. Stir gently to combine.
- If using, sprinkle breadcrumbs evenly over the top of the casserole.
- Transfer the skillet to the preheated oven (or pour the mixture into a baking dish if your skillet is not oven-safe).
- Bake for 20-25 minutes, or until the casserole is bubbly and the top is lightly golden.
- Let stand for a few minutes before serving.

- For a creamier sauce, you can use evaporated milk instead of regular milk.
- Add a pinch of nutmeg to the cheese sauce for an extra layer of flavor.
