  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound broccoli florets
  • 1 medium butternut squash, peeled, seeded, and cubed
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/4 cup heavy cream
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup breadcrumbs (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
  3. Add broccoli florets and cubed butternut squash to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are slightly tender.
  4. In a small bowl, whisk together shredded cheddar cheese, milk, heavy cream, salt, and pepper until smooth.
  5. Pour the cheese sauce over the vegetables in the skillet. Stir gently to combine.
  6. If using, sprinkle breadcrumbs evenly over the top of the casserole.
  7. Transfer the skillet to the preheated oven (or pour the mixture into a baking dish if your skillet is not oven-safe).
  8. Bake for 20-25 minutes, or until the casserole is bubbly and the top is lightly golden.
