Description

Make these simple, no-bake brownie protein bites using black beans for a fudgy texture and added fiber. These bites are packed with protein and low in added sugar.


Ingredients

  • 1 (15-ounce) can black beans, rinsed and drained well
  • 1/2 cup rolled oats
  • 1/2 cup chocolate protein powder (whey or plant-based)
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup maple syrup or honey
  • 2 tablespoons nut butter (almond or peanut)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup mini dark chocolate chips (optional)


Instructions

  1. Place the rinsed black beans, rolled oats, protein powder, cocoa powder, maple syrup, nut butter, vanilla extract, and salt into a food processor.
  2. Process the mixture until it becomes completely smooth and uniform. Stop and scrape down the sides as needed.
  3. If the mixture seems too sticky, add 1 tablespoon of extra protein powder or oats at a time until it forms a thick dough.
  4. Stir in the mini chocolate chips by hand, if using.
  5. Roll the dough into small, uniform balls, about 1 inch in diameter.
  6. Place the finished bites on a parchment-lined plate or baking sheet.
  7. Refrigerate for at least 30 minutes to allow them to firm up before serving.

Notes

  • Rinsing the black beans thoroughly removes the liquid that can make the bites taste bean-like. Pat them dry with a paper towel for best results.
  • For a lower sugar option, substitute the maple syrup with 1/4 cup of pureed dates or use a sugar-free sweetener equivalent.
  • Store the finished bites in an airtight container in the refrigerator for up to one week.
