- 2 pounds Brussels sprouts, trimmed and halved
- 4 tablespoons olive oil, divided
- 1/2 cup grated Parmesan cheese, plus more for serving
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 1 cup croutons
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the halved Brussels sprouts with 2 tablespoons of olive oil, salt, and pepper on a baking sheet.
- Roast for 20 to 25 minutes, stirring halfway, until the sprouts are tender and slightly charred. Set aside to cool slightly.
- While the sprouts roast, prepare the dressing. In a small bowl, whisk together 1/4 cup olive oil, lemon juice, Dijon mustard, minced garlic, Worcestershire sauce, pepper, and salt until well combined.
- In a large bowl, combine the roasted Brussels sprouts, Parmesan cheese, and croutons.
- Pour the dressing over the salad and toss gently to coat everything evenly.
- Serve immediately with extra Parmesan cheese on top.
Notes
- For extra crunch, you can lightly toast the croutons in a dry pan before adding them.
- If you prefer a creamier dressing, add one small egg yolk to the dressing mixture.
- You can roast the sprouts ahead of time and assemble the salad just before serving.
