No-Bake Buckeye Graham Crackers

Description

Make these easy, no-bake treats combining peanut butter, graham crackers, and chocolate, inspired by classic Buckeye candy.


Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 package (14.4 ounces) graham crackers, whole sheets
  • 12 ounces semi-sweet chocolate chips
  • 1 tablespoon shortening or coconut oil


Instructions

  1. In a medium bowl, mix the peanut butter, powdered sugar, softened butter, and vanilla extract until smooth. This is your peanut butter filling.
  2. Take one graham cracker sheet and spread about 1 tablespoon of the peanut butter mixture evenly over the top surface.
  3. Place a second graham cracker sheet directly on top of the filling, pressing gently to form a sandwich.
  4. Cut the graham cracker sandwich in half crosswise to create two rectangles. Repeat until all crackers are used. You should have about 18-20 filled crackers.
  5. Place the filled crackers on a baking sheet lined with parchment paper. Freeze for 30 minutes to firm up the filling.
  6. In a microwave-safe bowl, combine the chocolate chips and shortening (or coconut oil). Microwave in 30-second intervals, stirring well after each, until the chocolate is completely melted and smooth.
  7. Dip the bottom two-thirds of each frozen graham cracker sandwich into the melted chocolate, leaving a small portion of the top graham cracker exposed, similar to a Buckeye candy.
  8. Place the dipped crackers back onto the parchment-lined sheet.
  9. Refrigerate for at least 1 hour, or until the chocolate is fully set.

Notes

  • If you prefer a firmer filling, chill the peanut butter mixture for 15 minutes before spreading.
  • For a cleaner dip, use a fork to lift the cracker out of the chocolate, allowing excess to drip off before placing it on the parchment paper.
  • Store leftovers in an airtight container in the refrigerator.
