Spicy and guilt-free buffalo cauliflower bites, perfect for game day or any time you crave a healthy snack.
Ingredients
Scale
- 1 head cauliflower, cut into florets
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup unsweetened almond milk
- 1/2 cup buffalo wing sauce
- 2 tablespoons melted butter
- 1 tablespoon honey
- 1 teaspoon apple cider vinegar
- Optional: Ranch or blue cheese dressing for dipping
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, garlic powder, paprika, salt, and pepper.
- Pour in the almond milk and whisk until you have a smooth batter.
- Add the cauliflower florets to the batter and toss to coat evenly.
- Arrange the coated cauliflower on the prepared baking sheet in a single layer.
- Bake for 20-25 minutes, or until the cauliflower is tender and lightly golden.
- While the cauliflower is baking, prepare the buffalo sauce. In a small bowl, whisk together the buffalo wing sauce, melted butter, honey, and apple cider vinegar.
- Once the cauliflower is done baking, carefully toss the hot florets in the buffalo sauce until well coated.
- Return the sauced cauliflower to the baking sheet and bake for another 5-7 minutes, or until the sauce is slightly caramelized.
- Serve immediately with your favorite dipping sauce.
Notes
- For crispier bites, you can air fry the cauliflower at 375°F (190°C) for 15-20 minutes, tossing halfway through, before saucing.
- Adjust the spice level by using more or less buffalo sauce.
- Feel free to add a pinch of cayenne pepper to the batter for extra heat.
