- 1 large head of cauliflower, cut into bite-sized florets
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup unsweetened almond milk (or milk of choice)
- 1/2 cup panko breadcrumbs
- 1/2 cup buffalo sauce (your favorite brand)
- 2 tablespoons unsalted butter, melted
- 1 tablespoon white vinegar
- Optional: Ranch or blue cheese dressing for dipping
- Optional: Celery sticks for serving
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, garlic powder, paprika, salt, and pepper.
- In a separate bowl, whisk together the almond milk and panko breadcrumbs.
- Dip each cauliflower floret first into the flour mixture, ensuring it’s fully coated. Then, dip it into the almond milk and panko mixture, pressing gently to help the breadcrumbs adhere.
- Place the coated cauliflower florets on the prepared baking sheet in a single layer.
- Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- While the cauliflower bakes, prepare the buffalo sauce. In a small saucepan over low heat, combine the buffalo sauce, melted butter, and white vinegar. Stir until well combined and heated through.
- Once the cauliflower is baked and crispy, toss it gently with the buffalo sauce until evenly coated.
- Return the sauced cauliflower to the oven for another 5 minutes to allow the sauce to set.
- Serve immediately with your favorite dipping sauce and celery sticks, if desired.
Notes
- For extra crispiness, you can double-coat the cauliflower by dipping it in the flour mixture again after the panko coating.
- Adjust the amount of buffalo sauce to your preferred level of spice.
- If you don’t have panko breadcrumbs, regular breadcrumbs can also be used.
