  • 2 large zucchinis
  • 1.5 cups shredded cooked chicken
  • 1/2 cup Buffalo wing sauce
  • 1/4 cup cream cheese, softened
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons ranch dressing or blue cheese dressing
  • 1 tablespoon chopped fresh chives or parsley, for garnish


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise. Use a spoon to scoop out the seeds and some of the flesh, creating a boat-like hollow. Be careful not to scoop too deep or break the skin.
  3. In a medium bowl, combine the shredded chicken, Buffalo wing sauce, and softened cream cheese. Mix well until the chicken is evenly coated.
  4. Stir in the shredded cheddar cheese and ranch or blue cheese dressing into the chicken mixture.
  5. Spoon the Buffalo chicken mixture evenly into the hollowed-out zucchini boats.
  6. Place the stuffed zucchini boats on a baking sheet.
  7. Bake for 20-25 minutes, or until the zucchini is tender and the filling is heated through and bubbly.
