Description

  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 1/4 cup your favorite buffalo sauce
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 4 large whole wheat tortillas
  • 1/2 cup shredded lettuce or mixed greens
  • 1/4 cup chopped celery
  • 2 tablespoons blue cheese dressing or ranch dressing (optional)


Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. In a medium bowl, gently toss the drained chickpeas with the buffalo sauce, olive oil, garlic powder, and salt until they are well coated.
  3. Spread the coated chickpeas in a single layer on a baking sheet lined with parchment paper.
  4. Roast for 15 to 20 minutes, stirring halfway through, until the chickpeas are slightly crispy.
  5. Warm the tortillas according to package directions, either in a dry skillet or briefly in the microwave.
  6. To assemble, place a portion of the roasted buffalo chickpeas down the center of each warm tortilla.
  7. Top the chickpeas with shredded lettuce and chopped celery.
  8. Drizzle with blue cheese or ranch dressing, if you are using it.
  9. Fold in the sides of the tortilla and then roll up tightly to form your wrap.
