Enjoy a taste of Louisiana with this low-carb Cajun Cauliflower Jambalaya. This recipe swaps traditional rice for cauliflower rice, packed with bold Cajun spices, savory sausage, and tender shrimp for a flavorful and healthier twist on a classic.

- 1 tablespoon olive oil
- 1 pound smoked sausage, sliced
- 1 pound large shrimp, peeled and deveined
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 (14.5 ounce) can diced tomatoes, undrained
- 4 cups cauliflower rice
- 1/4 cup chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Add the sliced sausage and cook until browned, about 5-7 minutes. Remove sausage from the skillet and set aside.
- Add the shrimp to the skillet and cook for 1-2 minutes per side, until pink and cooked through. Remove shrimp from the skillet and set aside with the sausage.
- Add the chopped onion, bell pepper, and celery to the skillet. Cook until softened, about 5-7 minutes.
- Stir in the minced garlic, Cajun seasoning, smoked paprika, and cayenne pepper (if using). Cook for 1 minute until fragrant.
- Add the diced tomatoes (with their juice) to the skillet and bring to a simmer.
- Stir in the cauliflower rice. Cover and cook for 5-7 minutes, or until the cauliflower rice is tender.
- Return the cooked sausage and shrimp to the skillet. Stir to combine and heat through.
- Stir in the fresh parsley.
- Season with salt and black pepper to taste. Serve hot.
Notes
- For an extra kick, add more cayenne pepper.
- Feel free to add other vegetables like corn or peas.
- If you don’t have fresh parsley, you can use dried parsley, but use less.
