  • 1 cup stone-ground grits
  • 3 cups water
  • 1 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup butter
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1/2 cup chopped yellow onion
  • 1/4 cup chopped green bell pepper
  • 2 cloves garlic, minced
  • 1/2 teaspoon Cajun seasoning
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt


Instructions

  1. Bring water and milk to a boil in a medium saucepan.
  2. Gradually whisk in the grits. Reduce heat to low, cover, and simmer for 20-25 minutes, stirring occasionally, until thickened.
  3. Stir in cheese, butter, salt, and pepper until smooth and creamy.
  4. While grits are cooking, heat olive oil in a skillet over medium-high heat.
  5. Add shrimp, onion, and bell pepper to the skillet.
  6. Cook for 3-5 minutes, until shrimp are pink and vegetables are tender-crisp.
  7. Stir in Cajun seasoning and garlic. Cook for 1 minute more until fragrant.
  8. Spoon the cheesy grits into bowls and top with the shrimp mixture.

  • For extra creamy grits, use half-and-half instead of milk.
