- 1 cup stone-ground grits
- 3 cups water
- 1 cup milk
- 1/2 cup shredded cheddar cheese
- 1/4 cup butter
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1/2 cup chopped yellow onion
- 1/4 cup chopped green bell pepper
- 2 cloves garlic, minced
- 1/2 teaspoon Cajun seasoning
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
Instructions
- Bring water and milk to a boil in a medium saucepan.
- Gradually whisk in the grits. Reduce heat to low, cover, and simmer for 20-25 minutes, stirring occasionally, until thickened.
- Stir in cheese, butter, salt, and pepper until smooth and creamy.
- While grits are cooking, heat olive oil in a skillet over medium-high heat.
- Add shrimp, onion, and bell pepper to the skillet.
- Cook for 3-5 minutes, until shrimp are pink and vegetables are tender-crisp.
- Stir in Cajun seasoning and garlic. Cook for 1 minute more until fragrant.
- Spoon the cheesy grits into bowls and top with the shrimp mixture.
Notes
- For extra creamy grits, use half-and-half instead of milk.
- Adjust the amount of Cajun seasoning to your spice preference.
- Garnish with fresh chopped parsley or chives if desired.
