- 1 tablespoon olive oil
- 1 pound large shrimp, peeled and deveined
- 1 teaspoon Cajun seasoning (or more to taste)
- 1 small onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup chicken broth
- 1 cup white rice, uncooked
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the shrimp and sprinkle with Cajun seasoning. Cook for 1-2 minutes per side until pink. Remove shrimp from the skillet and set aside.
- Add the chopped onion and bell pepper to the same skillet. Cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Pour in the diced tomatoes (with juice) and chicken broth. Bring the mixture to a simmer.
- Stir in the uncooked rice and dried thyme.
- Reduce heat to low, cover the skillet, and cook for 15-20 minutes, or until the rice is tender and the liquid is absorbed. Do not lift the lid while cooking.
- Stir the cooked shrimp back into the rice mixture. Heat through for about 2 minutes.
- Taste and adjust salt and pepper as needed.
- Garnish with fresh parsley before serving your delicious skillet meal.

- Adjust the amount of Cajun seasoning based on how spicy you like your food.
- If you prefer, you can substitute brown rice, but you will need to increase the cooking time slightly.
- For richer flavor, use seafood broth instead of chicken broth.
