- 1/2 cup chopped yellow onion

- 1/2 teaspoon Cajun seasoning
- 1/4 teaspoon smoked paprika

- 1 cup stone-ground grits
- 3 cups milk
- 1 cup chicken broth
- 4 tablespoons butter
- 1 cup shredded sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 green onions, sliced, for garnish
Instructions
- Cook the grits: In a medium saucepan, combine grits, milk, and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, stirring occasionally, until tender and creamy.
- While grits are cooking, prepare the shrimp: In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Add onion and bell peppers and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Add shrimp, Cajun seasoning, smoked paprika, salt, and pepper. Cook for 3-5 minutes, or until shrimp are pink and cooked through.
- Stir the remaining 4 tablespoons of butter, cheddar cheese, and Parmesan cheese into the cooked grits until melted and smooth.
- Season with salt and pepper to taste.
- Spoon the creamy grits into bowls.
- Top with the Cajun shrimp and vegetable mixture.
- Garnish with sliced green onions.
