Description

  • 2 cloves garlic, minced
  • 1/2 teaspoon Cajun seasoning
  • 1/4 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 1 cup stone-ground grits
  • 3 cups milk
  • 1 cup chicken broth
  • 4 tablespoons butter
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 green onions, sliced, for garnish


Instructions

  1. Cook the grits: In a medium saucepan, combine grits, milk, and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, stirring occasionally, until tender and creamy.
  2. While grits are cooking, prepare the shrimp: In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Add onion and bell peppers and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Add shrimp, Cajun seasoning, smoked paprika, salt, and pepper. Cook for 3-5 minutes, or until shrimp are pink and cooked through.
  5. Stir the remaining 4 tablespoons of butter, cheddar cheese, and Parmesan cheese into the cooked grits until melted and smooth.
  6. Season with salt and pepper to taste.
  7. Spoon the creamy grits into bowls.
  8. Top with the Cajun shrimp and vegetable mixture.
  9. Garnish with sliced green onions.

Notes

  • For extra spice, add a pinch of cayenne pepper to the shrimp mixture.
  • You can use quick-cooking grits, but adjust the cooking time according to package directions.
