This Cajun-Spiced Potato Salad brings a bold, spicy kick to a classic dish. It is a creamy, flavorful potato salad with a zesty Cajun seasoning blend.

- 2 pounds russet potatoes, peeled and cut into 1-inch cubes
- 1 cup mayonnaise
- 1/4 cup chopped celery
- 1/4 cup chopped red onion
- 2 tablespoons Cajun seasoning
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 hard-boiled eggs, chopped (optional)
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Place the potato cubes in a large pot and cover with cold water. Bring to a boil, then reduce heat and simmer until tender, about 10-15 minutes.
- Drain the potatoes and let them cool completely.
- In a large bowl, combine the mayonnaise, celery, red onion, Cajun seasoning, Dijon mustard, apple cider vinegar, salt, and black pepper. Stir until well combined.
- Gently fold in the cooled potatoes and chopped hard-boiled eggs (if using) until evenly coated.
- Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld.
- Garnish with fresh parsley before serving.
Notes
- For extra spice, add a pinch of cayenne pepper to the dressing.
