Description

  • 1 cup (2 sticks) unsalted butter
  • 1 1/4 cups unsweetened cocoa powder
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips
  • 1 cup crushed candy canes, divided
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/4 teaspoon peppermint extract


Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Melt the butter in a saucepan over low heat. Remove from heat and whisk in the cocoa powder until smooth.
  3. Stir the granulated sugar into the chocolate mixture. Beat in the eggs one at a time, mixing well after each addition. Add the vanilla extract.
  4. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Fold in the white chocolate chips and 1/2 cup of the crushed candy canes.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 25 to 30 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached.
  8. Let the brownies cool completely in the pan on a wire rack.
  9. While cooling, prepare the glaze: Whisk together the powdered sugar, milk, and peppermint extract until smooth. Add more milk, one teaspoon at a time, if the glaze is too thick.
  10. Once the brownies are cool, drizzle the peppermint glaze over the top. Immediately sprinkle the remaining 1/2 cup of crushed candy canes over the glaze.
  11. Allow the glaze to set before cutting into squares.

Notes

  • For an extra fudgy texture, slightly underbake the brownies by about 2 minutes.
  • You can make these brownies up to two days ahead and store them covered at room temperature.
