Description
These carrot cake muffins are a classic dessert in a portable format. Spiced carrot cake muffins are complete with traditional cream cheese frosting.

- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon

- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups grated carrots
- 1/2 cup chopped pecans (optional)
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and ginger.
- In a separate bowl, whisk together the granulated sugar, vegetable oil, eggs, and vanilla extract until well combined.
- Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
- Gently fold in the grated carrots and chopped pecans (if using).
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 20-25 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
- Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
- While the muffins cool, prepare the cream cheese frosting. In a medium bowl, beat the softened cream cheese and butter with an electric mixer until smooth and creamy.
- Gradually add the powdered sugar, one cup at a time, beating until fully incorporated.
- Stir in the vanilla extract until the frosting is light and fluffy.
- Once the muffins are completely cool, pipe or spread a generous amount of cream cheese frosting on top of each muffin.
- Serve immediately or store in an airtight container in the refrigerator.

- Ensure muffins are completely cool before frosting to prevent the frosting from melting.
- For best results, use room temperature cream cheese and butter for the frosting.
- You can omit the pecans if you prefer.
