Description

Enjoy a delicious and guilt-free Margherita pizza with a healthy cauliflower crust. This recipe is perfect for a low-carb pizza night.

Ingredients

Scale
  • 1 medium head cauliflower, riced
  • 1 large egg, beaten
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup tomato sauce
  • Fresh basil leaves
  • Additional mozzarella cheese for topping

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rice the cauliflower using a food processor or a box grater.
  3. Steam or microwave the riced cauliflower until tender, then let it cool.
  4. Squeeze out as much moisture as possible from the cauliflower using a cheesecloth or a clean kitchen towel. This step is crucial for a crispy crust.
  5. In a bowl, combine the dried cauliflower, beaten egg, mozzarella cheese, Parmesan cheese, oregano, garlic powder, salt, and pepper. Mix well until it forms a dough.
  6. Press the dough evenly onto a baking sheet lined with parchment paper, forming a pizza crust.
  7. Bake the crust for 15-20 minutes, or until golden brown and firm.
  8. Remove the crust from the oven and spread the tomato sauce evenly over it.
  9. Sprinkle with additional mozzarella cheese and arrange fresh basil leaves on top.
  10. Return the pizza to the oven and bake for another 5-10 minutes, or until the cheese is melted and bubbly.
  11. Slice and serve immediately.

Notes

  • For an extra crispy crust, you can pre-bake the cauliflower for a few minutes before squeezing out the moisture.
  • Feel free to add your favorite pizza toppings.
  • Ensure the cauliflower is completely dry before mixing to prevent a soggy crust.
