Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground allspice
  • 1 1/4 cups milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract


Instructions

  1. Whisk together the flour, sugar, baking powder, baking soda, salt, and all the spices in a large bowl.
  2. In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine.
  4. Heat a lightly oiled griddle or large skillet over medium heat.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, until bubbles appear on the surface and the edges look set, then flip and cook until golden brown.
  7. Serve immediately with your favorite toppings.

Notes

  • For extra flavor, steep a chai tea bag in the milk for 10 minutes before using it in the recipe.
  • Maple syrup or honey are wonderful toppings for these spiced pancakes.
  • You can add 1/4 cup of finely chopped pecans or walnuts to the batter for texture.
